If you know me, you know that for the last year or so I have barely been in my kitchen - except to pour myself a glass of wine. My oven has steadily been used for sweater storage and my favourite thing to make for dinner has been reservations. That being said - one of my goals is to start cooking more, especially with new and different ingredients and sharing these recipes with you!
So when I came across this really easy recipe for Persimon and Chorizo Pizza - I knew I had to give it a try! I had never had persimons before, but I love pizza and love spicy chorizo - so I was curious to see the combination.
Persimon, from Spain are unlike other persimmons. They're always ready to eat and do not need to be ripened like other persimmons. If it's firm - it's ready to eat! Persimon come from the Ribera del Xúquer region, near Valencia - where there are more than 5,000 registered, certified Persimon growers. In recent years, the interest in Persimon has grown, around the world - boosting production from this region.
Fun Fact: "Rojo Brillante" was a new variety of persimmon that emerged from Spain and was so different it was granted a new name, Persimon (with only 1 "m").
I chose an pretty easy recipe to get myself back in the kitchen. The last thing I needed to do was attempt something overwhelming and be scared off. LOL So, pizza it was! Mind you, rolling out the dough did give me a pretty decent arm workout - but besides that, it was all incredibly simple! Not only as the recipe simple, but I used all fresh ingredients and the dish is a healthy one as well!
Food Fact: A Persimon contains seven essential nutrients (vitamin A, manganese, magnesium, potassium, folate, vitamin C, and vitamin K) and has 6g of fiber, double the amount found in a peach, banana or orange.

Persimon and Chorizo Pizza - Serves 4
What You'll Need:
500g pizza dough
2 Persimons, thinly sliced crosswise
2 tbsp lemon juice
1 cup thinly sliced spicy chorizo
1/2 cup shaved Manchego cheese
2 tsp balsamic glaze
2 cups baby arugula
1 tsp olive oil
pinch of salt and pepper
Preheat your oven to 425° F.
On a lightly oiled work surface - divide dough in half. Roll and stretch halves to for two 9" x 15" rectangles. Transfer rectangles to parchment lined baking sheets.
Toss Persimon slices with lemon juice and arrange on dough, top with chorizo slices.
Bake in preheated oven for 10-15 minutes until crust is golden brown.
Remove from oven, sprinkle with shaved cheese and drizzle with balsamic glaze.
Toss arugula with oil, salt and pepper and top on pizzas just before serving.
Boom - you're done! I told you it was easy!
